After harvest, the cane is quickly processed and fermented using proprietary yeast strains developed over generations. This approach preserves the character of the sugarcane and allows Haiti’s terroir to shine through in the final product. Combined with more than 160 years of expertise, it creates a rum unlike any other.

Another defining characteristic is Barbancourt’s distillation process. Inspired by Cognac traditions, the house uses a unique double-column distillation system that combines the elegance of traditional methods with exceptional control over purity, texture, and aroma while preserving the fresh character of the sugarcane.
