Asian Wrap
Serves 1

9-inch scallion pancake
½ ounce iceberg lettuce, shaved
1 ¼ ounces red cabbage, shaved
½ ounce red pepper, julienne
½ ounce carrots, julienned½ ounce scallion, julienned
1 tsp. Asian herbs (consider basil, lemongrass, chive, and mint)

If you want to make a vegetarian version, add:
3 ounces Japanese eggplant, cooked
3 ounces tofu, cooked
1 ounce hoisin sauce

If you wish to make a pork version, add:
5 ounces cooked pork belly
1 ounce braising liquid

Directions: Lay pancake flat. Spread with hoisin, if desired. Add vegetables, then eggplant and tofu or braised pork belly. Roll up burrito-style so that one end is open. Wrap closed end in foil and serve.
